Question

Think I would just measure them up and order some decent stainless items instead of the stock items. Loads of fastner suppliers out there.

Stainless bolts should never be used for safety critical fixings like brake or suspension fixings!!
Those parts should only held in place with a bolt that meets or exceeds the manufacturers specification !!
Stainless bolts meet very few stress tests.

ok, i only ever used titanium on my bike builds but i guess thats a little pricey lol.
just think there must be a better solution than stock rusty items???

Maybe, I just copper grease all the bolts and live with the rusty heads, although I have had some success dipping bolt heads and nuts in Bilt Hamber Hydrate 80 it turns them a satin Black and does seem to keep the rust at bay.
